[livejournal.com profile] daisy_knotwise and I tried out Armando's Pizza tonight for dinner. The crust was good, the sauce a bit skimpy (but if we hadn't tried a pizza with extra cheese, maybe that would have been better). The large pizza was enormous and about half of it is currently in our fridge.

We'll probably try them again, but in a pan or stuffed version instead of thin crust next time.

I've realized over the years that the most important ingredient for me is the sauce. Not a good sauce, not a good pizza.

Papa Del's still defines what pizza should be for me; in my experience their deep dish "Sicilian" is rarely even approached and never equaled. (Of course I've only tried a very few places up there in the Chicago area, so I suppose I can't consider myself a real expert on "Chicago style pizza".) I personally find getting extra cheese on Pop's a mistake, but if one must have extra cheese, it is critical to also order extra sauce, or the pizza is too dry. I would expect this to apply to any decent pizza -- if you put extra cheese on it, you also need to put on extra sauce.

Good sauce is vital to a good pizza experience, but good crust is too, and in my experience the crust is where a lot of places fall short.

I agree. There needs to be a precise amount of sauciness. It can't fade into the background, but too far in the forefront is a major problem.

Crust is a major issue when you're a fan of New York style pizza (floppy crust) living in Chicago. Somehow pizza has become a hot button issue since I moved here.

I will refrain from contributing to this discussion... since really who wants to hear me rant about NY Pizza vs. Chicago Pizza yet again. :) But on a related topic... I used to think Sauce was the most important part of the pizza until I moved to St. Louis... and made the mistake of ordering a St. Louis style pizza at Imo's. Now I know the cheese is the most important part.

If you're ever in Louisville, I would recommend either Wick's Pizza or Tony Boombozz. Both good pizzas.
